All natural organic Chickpeas are an excellent source of soluble fiber. They are one of the most nutritious of all the legumes, high in calcium, phosphorus and potassium. They have an exceptionally high iron and vitamin C content and contain B complex as well. Like all pulses, they are rich in essential fatty acid. They're a good source of protein. In fact, one cup of these nutty tasting legumes supplies almost half a day's requirement for fiber. The type of soluble fiber found in chickpeas is not only heart-healthy, but also helps to stabilize blood sugars. Their high fiber content makes them satisfying and filling so you're less likely to head for the candy machine two hours after eating. The reality is most Australians need more fiber, and chickpeas are one of the best sources around.
Kym's Homemade Hummus
Enjoy this old favourite with this simple recipe.
Ingredients
- 1-3/4 cups dried Kym's Homegrown Organic Chickpeas
- 1/2 cup Organic Sesame Tahini
- 1/4 cup cold water
- 1/4 cup fresh Lemon Juice
- 1/2 teaspoon ground Organic Cumin
- 3-4 cloves organic Garlic, mashed
- 1 tablespoon quality Organic Extra-virgin Olive Oil
Method
- Soak the chickpeas for 8 hours with the baking soda in cold water to cover. Drain and wash chickpeas.
- Place chickpeas in fresh water bring the chickpeas to a boil over high heat, reduce heat, cover, and cook until soft, about 45 -60 minutes.
- Drain, reserving a bit of the liquid.
- Blend in a food processor or blender the tahini, cold water, lemon juice, cumin, and garlic. Measure out 1/2 cup of this sauce for the hummus, saving the rest for salad dressings or sandwiches.
- Put the drained chickpeas in a food processor and process to a rough puree, adding a little of the cooking liquid if necessary. The mixture should not be totally smooth.
- Add the tahini sauce and process until just mixed.
- Scrape the mixture into a bowl. Stir in the olive oil.
- Serve with GF lavish bread & crackers, or carrot sticks.
Chick Pea Burger
Ingredients
- 400g Kym's Homegrown Organic Chick Peas soaked
- zest 1 Organic Lemon, plus Juice 1/2
- small bunch Organic Coriander, Chopped
- 1 Egg
- 100g fresh GF Breadcrumbs or almond meal
- 1 medium Organic Red Onion , 1/2 diced, 1/2 sliced
- 1 tbsp Organic Olive Oil
- 4 small GF buns
- 1 large Organic Tomato, sliced, 1/2 cucumber, sliced and Chilli Sauce, to serve
Method
- Soak the chickpeas in water make sure you cover the chickpeas, add a little bicarb soda , soak overnight or 8 hrs. Drain and wash chickpeas, add Chickpeas to saucepan cover with water and bring to boil, reduce heat cover and cook until soft. Drain and rinse let cool . In a food processor, whizz the chickpeas, lemon zest, lemon juice, cumin, half the coriander, the egg and some seasoning. Scrape into a bowl and mix with 80g of the breadcrumbs and the diced onions. Form 4 burgers, press remaining breadcrumbs onto both sides and chill for at least 10 mins.
- Heat the oil in a frying pan until hot. Fry the burgers for 4 mins each side, keeping the heat on medium so they don\'t burn. To serve, slice each bun and fill with a slice of tomato, a burger, a few red onion slices, some cucumber slices, a dollop of chilli sauce and the remaining coriander.
Chilli Dressing & Chickpea Salad
This stuff is sooo decadently good you will love it.
Ingredients for: Chilli Dressing
- 1 small Organic Shallot, peeled
- 3/4 cup Organic Cottage Cheese
- 1/4 cup Organic Egg Mayonnaise GF
- 2 tablespoons Organic Buttermilk
- 2 tablespoons Organic Apple Cider Vinegar
- 1/4 cup Milk ( could be a little less )
- 1 tablespoon chopped Organic Dill
- 1/4 teaspoon Salt
- 1/4 teaspoon freshly ground Pepper
Ingredients for: Chickpea Salad
- 400g Kym's Homegrown Organic Chick Peas, cooked
- 3 cups peeled, seeded and diced Organic Cucumber
- 2 cups halved grape Organic Tomatoes or Cherry Tomatoes
- 1/4 cup crumbled Feta Cheese
- 1/4 cup diced Organic Red Onion
- 1/2 cup Creamy Dill Dressing
- Freshly ground Pepper to taste
Method
- To prepare dressing: With the food processor running, add shallot through the feed tube and process until finely chopped. Add cottage cheese, mayonnaise, buttermilk powder and vinegar. Process until smooth, scraping down the sides as necessary, about 3 minutes. Pour in milk while the processor is running. Scrape down the sides. Add dill, salt and pepper and process until combined. (Makes 1 1/4 cups.)
- To prepare Chickpeas : Soak the chickpeas overnight or 8 hrs in water make sure you cover the chickpeas, add a little bicarb soda. Drain and rinse chickpeas, add chickpeas to saucepan cover with water and bring to boil cook until tender. Drain and rinse,cool. Perpare Salad : Combine chickpeas, cucumber, tomatoes, cheese and onion in a medium bowl. Add dressing and pepper and toss to coat. (Refrigerate extra dressing for up to 1 week.)
Berry Smoothie
Mix all ingredients in Blender. Enjoy!

- 1 Banana Organic Frozen
- 1 cup Kefir or Yoghurt or Coconut Water
- 2 Tbls Honey
- 2 Tbls of Kym's Homegrown Organic Linseed
